Though the food and the atmosphere are excellent (cozy, but
sophisticated), the national dishes of Trinidad (pelau, roti, bake and
shark, etc.) are not usually served there.

There are several excellent lodging facilities in Trinidad. The Hilton
(380 rooms) will get the prize for not only having all the amenities you
can think of (pool, tennis court, several bars and restaurants), but an
excellent guest/concierge service.
It is also quite peculiar: the hotel is built upside down on the side of a
mountain (that is why they call it the Upside Down hotel). The entrance
and the lobby are on top of the hotel, and the floors go down in
increasing number. For example, our Executive Floor (the 7th) is much
higher than the 11th (going in regression).
To top all of the above, the Hilton, at carnival, is in the thick of
things: 10-minute walk to the Savannah, but far enough for you to sleep
at night.
