Starters - Maryland Crab Cakes

1. In a large bowl, combine crabmeat, breadcrumbs, shallots, milk, mayonnaise, parsley, seasoning and pepper. Form into 8 round cakes. Cover and refrigerate at least 20 minutes.
2. Lightly dust each cake with flour.
3. In a large nonstick skillet, melt butter and cook crab cakes 4 to 5 minutes per side, until golden brown and crispy. Serve with lemon wedges and a mixed green salad alongside.

  • 4 (6-ounce) cans crabmeat or 1 pound fresh crabmeat, picked through for shells
  • 3/4 cup breadcrumbs
  • 2 shallots, finely chopped, or
  • 3 tablespoons finely chopped red onion
  • 1/4 cup low-fat milk
  • 2 tablespoons finely chopped fresh parsley
  • 1 teaspoon Chesapeake Bay or
  • Old Bay seasoning
  • 1/4 teaspoon ground white or black pepper
  • 3 tablespoons flour for dusting
  • 1 tablespoon butter
  • Lemon wedges
